Lamb Shank Soup (Malkou)

 

This is a traditional food to eat in Niger. It is often consumed when someone is feeling congested. The spiciness and the natural ingredients of the soup help to loosen congestion.

Ingredients

1 or 2 lb of lamb or goat shanks

½ tsp crushed red pepper or 2 medium very hot fresh pepper

½ tsp Bangkok blend seasoning*

½ tsp french thyme

½ tsp Northwood seasoning*

½ tsp Southweat seasoning*

½ tsp mitchell street steak seasoning*

½ tsp adobo seasoning*

½ tsp ginger

½ tsp coriander

½ tsp cumin

5 cloves of garlic

¼ onion

2 medium tomatoes

½ tsp smoked paprika

1 bay leave

Salt to test

Water as needed

Instructions

Peel and pound the garlic. Put the shanks, garlic, water, and the rest of the ingredients together in a pot. Place that pot on the oven on low medum then cook until the shanks become tender.

Serve with rice pancakes, bread, or straight.
