Cod Nuggets


Produces two batches of nuggets, takes about 11 minutes for each batch to fry. 
Serves 5.

Ingredients

24 to 32 oz of frozen cod

2/3 cup flour

1 tsp adobo seasoning

¾ tsp cayenne

1 ½ tsp smoked paprika (or ancho)

1 tsp garlic powder

1 tsp cumin

2 eggs

1.5 cups panko

2 tablespoons olive oil

3 bowls

Air fryer or oil to fry

Instructions

Preheat air fryer to 390

  • For flour for first coating,

Sift in the first bowl

2/3 cup flour

1/2 tsp adobo seasoning

1/4 tsp cayenne

1/2 tsp smoked paprika (or ancho)

1/2 tsp garlic powder

1 tsp cumin. Stir well the mixture and save.

  • Put in the second bowl, in blender process

1.5 cups panko

2 tablespoons olive oil

1 tsp Smoked paprika (or ancho)

1/2 tsp cayenne

1/2 tsp adobo seasoning

1/2 tsp garlic powder. Stir well and save the melange.

  • Beat the eggs in the third bowl

  • Cut cod into 1.5 in pieces , pat dry then first dredge through flour, dredge through eggs, and finally dredge through panko mixture and then air fry. If you do not have an air fryer, fry in oil.
