Chicken Peanut Stew

Ingredients
1 tsp coriander
1 tsp cumin
6 cloves of garlic ( pounded or sliced)
½ onion
2 medium tomatoes
1 tbsp tomato past
1 tsp of olive oil or coconut oil
1/3 cup peanut butter
1 lb chicken
½ bay leave
¼ tsp of ginger powder or grated fresh ginger
Salt to test.
Instructions
Cut the chicken into small pieces and wash.
1. Boil the small pieces of chicken in 1/2 liter of water by adding salt, 1/2 tsp coriander, 1/2 tsp cumin, 3 cloves of pounded garlic, 1/4 of ginger and diced onions.
2. After 30 minutes, remove the chicken from the heat and set it aside.
3. In a different pan or pot, heat the 1tbsp oil, add the diced tomatoes and let it cook for 1mn. Stir in the peanut butter and the rest of the ingredients. Let them cook and fry until the oil appears on the surface. You have to pay close attention and stir it as needed so that the peanut butter won’t stick and burn.
4. Add 1/3 cup of water, stir well and close the pot for about 4-5mn.
5. Add the chicken broth and cook till the onion inside disappears into the sauce.
6. Add the chicken and let it cook for 15mn on a low heat. The stew’s thickness depends on how you want it. You can always add water as needed during the cooking process.
7. Serve with rice or rice pancakes.
